Here’s a 6-step guide to preparing an amazing seafood dinner:

1. Bake it

Baking fish is simple, but it does require a few tricks to make sure the fish comes out flaky and

moist. Once you know how to bake fish, you can use different spices and herbs to create unique flavors for each type of fish.

Step 2: Place the fish on the foil and season with salt, pepper, or other seasonings, if desired. Spoon over any additional ingredients, such as herbs, citrus juices, or marinades.

Step 3: Fold the foil around the fish to form a package, and crimp the edges together to seal.

Step 4: Bake for 10 minutes per inch of thickness (up to 20 minutes for very thick fillets). For example, a 1-inch-thick fillet would bake for 10 minutes; a 2-inch-thick fillet would bake for 20 minutes.

3. Poach it

Poaching means cooking the fish in liquid. It’s a delicate process that will add flavor without

drying out the fillets or adding extra fat. Cover the fish or seafood with liquid to poach and bring

to a simmer. Once the liquid is simmering, reduce the heat to low and cook until done.

For fish, poaching is a matter of minutes. It can take just a few minutes for seafood, such as

shrimp or scallops.

4. Broil it

This approach is extremely useful for quickly baking fish and seafood. To ensure it doesn’t cook

or brown too quickly, cook the fish at least 6 inches away from the broiler and watch carefully.

Pan-seared fish is cooked in a hot skillet with little oil or butter. When you cook fish this

way, it’s important to let the pan get very hot before adding the fish.

5. Steam it

Traditional steaming is a fast, easy way to cook clams and mussels. Add seafood to a lidded

saucepan with cover and cook until the shells open (discard any that don’t).

Preheat the oven to 400°F. Place a clamshell or two on a baking sheet and add 1 tablespoon of

butter per shell. Bake until the shells open, about 10 minutes.

6. Grill it

Before threading the shrimp onto wooden skewers, immerse them in water for at least 30

minutes.

You’ll need 1 tablespoon additional virgin olive oil, 12 teaspoon fresh thyme leaves, and

chopped garlic 2 tbsp. white wine (dry) 1 pound peeled and deveined big shrimp, salt, and

pepper to taste.

Over medium-high heat, preheat the grill or grill pan. Combine the oil, garlic, and thyme in a

small bowl.

Mix the wine into the marinade in the bowl. Cook the skewers for about 2 minutes per side on

the grill or in a grill pan, or until pink all over.

Serve at room temperature.

refrigerator for up to 1 day.
